Seared scallop - blood orange sweet and sour sauce, purple potato puree, hearts of palm salad
2nd course
Lamb Moussiline - black truffle chicken mouse stuffed lamb chop with parisanne beets, pomme puree and a bing cherry lamb jus
Giant Prawns - crab and artichoke stuffed giant prawns with morel mushroom risotto, sweet potato hay and a lemon thyme emulsion
3rd course
Dou of chocolate mousse- with fresh raspberries
Profiteroles- with amaretto pastry cream and caramel sauce
